Lallemand Specialty Cultures is developing an extensive range of specialty strains for acidification to surface and ripening. We have developed partnerships with recognized international institutes in order to select new, fully characterized strains. These strains create signature flavors and specific functionalities in the areas of texture, surface and even biopreservation.
LSC markets a complete range of surface and ripening cultures under the LALCULT® brand:
- FLAV-ANTAGE® products offer specialized solutions for ripening: from aroma to color to texture.
- VELV-TOP® ferments consist of a large range of penicillium candidum to achieve a tailor-made cheese rind.
At LSC, portfolios of specialty cultures are available for all categories of cheese and meat applications.
LSC develops a range of cultures available in freeze dried form or deep frozen pellets to fit any application.
