Celebrated 40 days after Christmas, Candlemas is associated with a convivial time of eating crêpes, but do you know the origins of Candlemas Day?
According to historians, the celebration of Candlemas has pagan roots in an ancient fertility cult. These pagan rites involved asking for the return of favorable weather conditions and for a favorable harvest by eating crêpes as they look like the sun, a vital source of energy for the crops. It was said that the year’s flour would be lost if it was not used for crêpes at Candlemas.

This is a fitting occasion to taste a savory recipe, combining a crispy pastry with a melting filling: the famous “Jambon Emmental”. While both products, Jambon – a cooked ham, and Emmental – a Swiss-type cheese, have very unique and different production processes, they share a common link: ferments. Indeed, they can strongly benefit from the use of microorganisms, whether it is for their bioprotective, flavoring, coloring, or texturizing properties.
