As a long-term partner of the Center for Dairy Research, Lallemand was a guest speaker for the Master Short Course Series; an advanced cheesemaking course targeting experienced cheesemakers or cheese professionals.
From Troubleshooting cheese defects in white mold and bacterial surface-ripened cheeses to selecting the correct surface microflora for specific cheeses, we had the chance to share our expertise on key cheesemaking topics.
